Camembert is made generic worldwide. The name has been usurped by industry to improve the image of their production. Local and traditional practices have meaning only through genuine Camembert from Normandy to the raw milk AOC.

This rind cheese has a soft dough and pleasant. Its taste is characteristic and gains in power over time. Camembert is from a lactic coagulation : it is refined so from the outside.
