Charolais region is home to one of the greatest French goat herds, which originated in the sixteenth century. Saone-et-Loire is distinguished by the small size of farms : in 1994, 2,000 farmers owned between 10 and 20 goats.

Burgundy wine region known for its soil is also a hotbed of breeding. Charolais, famous beef breed promotes the reputation of this department. The cheese is naturally associated to the principal activity of the peasants. Even if they did not have dairy herds oriented strictly speaking, they knew take advantage of polyculture.
