This cheese is made over the past fifteen years on the farm of Vinage by Therese Marie Slater. Her husband, Michael comes from a family who works in cheese production for seven generations.
Its washed rind has a soft and chalky in the center. The powerful flavor recalls the tradition of the region for this type of cheese to taste. However, the chalky texture gives it a unique pleasant tasting. Depending on the season and refining, pulp softens and offers a creaminess that balances the flavors manly !
