Maroilles its name from the ancient village of Maroilles (Lalo Maro-or large-clearing) of the Gauls. It soon became famous cheese. Philip Augustus, St. Louis, Charles VI, Francis I, Charles V, as well as Turenne and Fenelon were their delight.
Refined for more than a dozen weeks, Maroilles has a soft dough and creamy. The rind of orange-red color almost the color of a brick. Moreover, its bouquet is strong and spicy flavor.
