The lake of Bancalié, between Albi and Castres, Dragan and Chantal Teotski cheese factory in the small hamlet of Ginestarié

It comes in the form of a pad of 4cm square and 2 inches tall. We must, according to the seasons, between 1.4 liters and 1.6 liters of milk to make this cheese.
