This is a product of tradition Berry, born on the banks of the Indre, in the shape of a truncated pyramid covered with ashes, to the square base a little more squat than the Pouligny.
The shape of this cheese originated in a legend. After the defeat in Egypt, Napoleon Bonaparte was visiting the castle of Valençay. When presented him with a pyramid-shaped cheese, the latter became enraged, drew his sword and cut off his head. Thus the Valençay took its present form.
